Here are 4 beloved spots for vegan eats in Colorado Springs
In this weekly feature, we’re celebrating the best of Colorado Springs’ food and drink scene — as determined by voters in the 2026 Best of the Springs (thebestofthesprings.com). We’ll throw in our own recommendation, too.
Up this week: Vegan.
Gold: Burrowing Owl
At the corner of an otherwise drab strip mall on the west side is this colorful, cozy nook where vegans gather alongside people from all walks of life with varying appetites. Yes, one and all crave something on the menu. Burrowing Owl serves tasty takes on burgers, tacos, sloppy joes, Phillies and much more between go-to bowls and salads. 1791 S. Eighth St. Suite H
Silver: Salad or Bust
It all started with “a salad bar on wheels” — a bus parked at the MeadowGrass Music Festival. Salad or Bust has since rolled into a spot downtown and inside Ivywild School, serving a fresh variety of salads, grain bowls, wraps and smoothies. The menu pledges vegan substitutions where needed. 8 E. Bijou St., Ivywild at 1604 S. Cascade Ave.

Bronze: Adam’s Mountain Cafe
“Whether you’re vegan, vegetarian or simply hungry, we’ve built our menu with intention and heart.” That’s the promise of Adam’s Mountain Cafe, a Manitou Springs staple that has helped set a regional standard for healthy eating and environmental sustainability in a finer dining setting. Vegan specialties are available for breakfast, lunch and dinner. 26 Manitou Ave.
Our recommendation: Santana’s Vegan Grill
Whether it’s a plant-based burrito in the morning, a “chicken” sandwich in the afternoon or a vegan-style burger or wings in the evening, Santana’s delivers quick fixes. At the drive-through window, one is greeted by a smiling face and the smell of fries. And did we mention vegan milkshakes? 5609 N. Academy Blvd.
