Mexican restaurant opens third location in Colorado Springs with another in the works

Miguel’s Mexican Bar & Grill has opened its third location in Colorado Springs.

This one is at 802 Village Center Drive, taking over the space in Rockrimmon formerly occupied by Salsa on the Rock. It was nearly a turnkey opening.

The extensive menu at this Miguel’s mirrors its sister restaurants, with warm chips and spicy salsa arriving at the table soon after guests are seated.

The posole we ordered was loaded with slowly braised pork, while the chile relleno came smothered in a red sauce delivering a lingering, mouth-warming kick.

“We painted the dining room and did a full cleanup of the kitchen,” assistant manager Laura Garcia said.

The restaurant boasts an extensive menu — from appetizers, soups, salads and desserts to tacos, chimichangas and combination plates. Two popular menu options are Big Bertha’s Burrito and Miguel’s Fiesta Fajita Burrito. For something unexpected, order the Hawaiian Fajitas.

This isn’t the last expansion planned by Miguel’s.

“We are very close to opening another spot at Woodmen (Road) and Lexington (Drive) in the Safeway shopping center,” Garcia said.

The fourth location will take over the former Tsing Tao House at 3604 Hartsel Drive.
