Follow creamy butter trail to White Lotus Café and Bakery

Jasmine Andrew, owner of White Lotus Café and Bakery in Colorado Springs, is stepping up her bakery game. Since opening her Thai-fusion café in November, she’s expanded beyond a handful of Asian-inspired sweets to include cakes, croissants and Japanese-style Shio pan butter rolls.

Those rolls are already a hit: pillowy dough wrapped around a cube of French butter that melts as it bakes, creating a crisp, buttery base. A sprinkle of Shio (the translation for salt in Japanese) balances the richness.

Andrew’s ingredient standards slowed the rollout.

“I tried several butters and ready-made laminated products, but none of them were the flavor I was looking for,” she said.

Now she uses Isigny Ste Mère Beurre de Tourage.

Croissants, a three-day process, are reserved for weekends at the bakery, 13141 Bass Pro Drive.

“I’m trying to find someone to train to help me,” she added.

Butter rolls ($3.50) and standout chicken curry puffs ($5) are available daily. Hours: 9 a.m.–2 p.m. and 4 p.m.–9 p.m. Tuesday–Friday, 9 a.m.–9 p.m. Saturday, 9 a.m.–8 p.m. Sunday.
