Sandwich shop debuts at Red Leg Brewing Co. in Colorado Springs

Gunnar’s Deli–Signature Sandwiches is the newest addition to the courtyard at Red Leg Brewing Co., 2323 Garden of the Gods Road. The concept replaces Oliver’s Delicatessen and comes from brothers Malek and Mo Deeb, who also own Sasquatch Cookies.

“We lived in New York for a while and loved the sandwiches there,” Mo said. “We missed them, and when the opportunity came up, we grabbed it.”

One of Sasquatch Cookies’ bake shops operates steps away from the new sandwich shop, making Red Leg a family affair.

Having bakery kitchens in place has helped Gunnar’s get going quickly. Caroline Fleming, who completed an apprenticeship at Sasquatch Cookies, now bakes the buns for Gunnar’s. The bread signals serious sandwich intent – fresh, sturdy and flavorful.

The menu is focused: six signature sandwiches, kid’s options, sides, drinks and even a doggie sub.

“Gunnar is our dog,” Mo said, noting the turkey-and-cheese dog sub runs $3.99.

For first-timers, Mo recommends Mo’s Windy City ($15.49) and 54th & 2nd ($15.99), though The Billy Crunch has become a fan favorite. Fleming credits the bread: crackled Dutch-style tiger bread made with a rice flour paste that bakes into a crunchy, leopard-spotted crust. The distinct texture elevates layers of chicken breast, Swiss and cheddar, mayo, chipotle aioli and crushed potato chips.
