Colorado Springs has a butcher shop making charcuterie | Table Talk
Enoc Morales, the head butcher at Cowboy Star, Restaurant & Butcher Shop, 5198 N. Nevada Ave., is doing more than just cutting all the meat used in the eatery. He is also making an array of charcuteries, which are used in the restaurant and for sale in the butcher’s cabinet.
Typically, he has prosciutto, pastrami, salami, smoked ham and mortadella. The mortadella is especially delicious, creamy and lightly spiced. All the handmade cold cuts are available for $34 a pound. The hours are 11 a.m.-7 p.m. Tuesdays through Saturdays. Details: 719-639-7438, cowboystarcs.com.
Smoked meat deli open

Jared and Deidre Hammond, with business partners Zac and Ciera Romey, have officially opened Hammond’s Pastrami & Delicatessen, 2925 W. Colorado Ave. The new eatery shares space with Trails End Taproom and Eatery, which was formerly The Mason Jar.
The menu features all things smoked, following the popular foods Jared has been applauded for producing on his several smokers for the couple’s flagship eatery, The Chuckwagon 719, 6453 Omaha Blvd.
When Jared started making smoked pastrami, he could not keep up with demand, selling out of the unctuous-tasting treat daily. He stepped up his production capabilities of pastrami and added several other smoked meats to round out the menu offered at Hammond’s deli. You can get a half sandwich (4 ounces of meat) or a full sandwich (8 ounces of meat). Other smoked meats offered include roast beef, prime rib, turkey and chicken. There are six hot sandwiches offered and three cold sandwiches, ranging in price from $7.99 to $19.99 for half sandwiches and $12.99 to $24.99 for whole sandwiches.
There’s a build-your-own sandwich option too. Meat can be purchased by the pound as well. There’s a rotating homemade daily soup on the menu also.
“We get our breads from Harvest Moon bakery in Denver,” Jared said. “We tasted what seemed like hundreds of bakery bread and by far they (Harvest Moon) were the best.”

Andrew and Lisa Kranz, husband and wife owners of Aspen Kitchens, 5020 N. Nevada Ave., have vastly expanded their kitchen and bath design studio, which was founded in 2020. In May they moved the design studio to a larger space in the University Village Shopping Center where they now offer a professional retail kitchen supply store.
The store is full of high-quality kitchen essentials, a huge supply of Green Egg grilling products, pantry goods, upscale truffles and home décor gift ideas. And best of all you can get complimentary gift wrapping for your purchases — something not often seen but appreciated. The comprehensive kitchen and bath service they offered previously, which included designing, sourcing materials and providing a general contractor under one roof for kitchen and baths, is still available.
“Andrew is the designer for kitchens and baths, but his is also a great cook. He’s a much better cook than me,” Lisa said. “My experience and passion are home décor.”

Wine classes
Uva Wine Bar, 1268 Interquest Parkway, offers Wine Boot Camp wine classes. For $39 (plus tax and tip) ,you learn the basics of wine tasting, main wine styles, major grape varietals, decoding wine labels and major wine regions of the world, while tasting wines with small bites. Beer pairing
The Manitou Brewing Co., 725 Manitou Ave., Manitou Springs, will have a five-course dinner paired with beer at 6 p.m. Jan. 23. For $85 (tax and tip included), you get Colorado trout, jicama salad, beef bone marrow and bison polupette (Italian meatballs in tomato sauce), duck leg and chai crème brûlée.
