Chipotle eyes Polaris Pointe for its 12th restaurant in the Pikes Peak region
Chipotle Mexican Grill plans to expand to Polaris Pointe, which would continue the fast-casual chain’s recent growth spurt in the Pikes Peak region.
The California-based Chipotle, which specializes in burritos, tacos, quesadillas and other items, has proposed construction of a 2,327-square-foot restaurant at 99 Spectrum Loop, southwest of North Gate Boulevard and Voyager Parkway, according to documents recently submitted. The location would be just east of the outdoor Ford Amphitheater.
Like other new Chipotles built in the area, the latest would have a “Chipotlane” — the restaurant chain’s version of a drive-thru, which allows customers to pick up digital orders without leaving their cars. The drive-thru is a relatively new feature that Chipotle introduced in 2019.
In addition to indoor seating, parking and landscaping, the new Chipotle would have a 350-square-foot patio with a handful of tables for outdoor dining and a bike rack for cyclists, the proposal submitted to city officials shows.
Assuming the project receives regulatory approvals, the restaurant’s construction would take place next year, according to a development schedule included in the proposal submitted to the city. It’s unknown when it would open.
The restaurant chain declined to confirm its new location, though “we are exploring opportunities to bring our real food to the Polaris Pointe community,” a Chipotle spokeswoman said via email.
At Polaris Pointe, Chipotle would join Bass Pro Shops, Boot Barn, Bourbon Brothers Smokehouse & Tavern, Kneaders’ Bakery & Café and several other stores and restaurants that are part of the mixed-use development.
Polaris Pointe also is home to hundreds of apartments and a growing number of entertainment venues that include the amphitheater, the Phil Long Music Hall at Bourbon Brothers (formerly Boot Barn Hall), the iFly indoor skydiving facility, a TopGolf driving range, Overdrive Raceway, the Air City 360 Adventure Park and Magnum Shooting Center.
New businesses that have recently opened or are poised to debut include Mountain Mike’s Pizza, Bad Ass Coffee, Red’s Sunset Grill and Escapology, a national chain of escape rooms in which participants solve puzzles to “escape” from a themed room, Polaris Pointe developer Gary Erickson said Tuesday.
A Texas de Brazil steakhouse and Surf Shack, an indoor water surfing venue, also are planned at Polaris Pointe.
“We’re fairly busy,” Erickson said.
