Marigold Cafe & Bakery adds quick-serve location on Colorado Springs’ south side

The family owners of the longtime sit-down restaurant on Colorado Springs’ northwest side have opened Marigold & Go, a third location of their Marigold brand that offers a quick-serve concept and adds a breakfast option.
Marigold & Go opened last week at 140 E. Cheyenne Road in Creekwalk, the shopping center northwest of Cheyenne and Nevada Avenue, south of the Springs’ downtown and a centerpiece of South Nevada Avenue redevelopment efforts.
At the original Marigold Café & Bakery, 4605 Centennial Blvd., and at Marigold Bistro, 146 E. Cheyenne Mountain Blvd., the former Walter’s Bistro, customers are seated and their orders are taken by servers, said Ghassan Nehme Jr., who shares ownership of the restaurants along with his father Ghassan Sr., mother, Julie, and sister, Cailee.

Customers at Marigold & Go, however, order at a front counter.
If they eat in, their food will be brought to them; the restaurant has dining room seating for up to 50 people, as well as patio seating, Nehme Jr. said.
But if customers choose to grab and go, orders will be available for carryout, he said.
Marigold & Go is designed to appeal to on-the-go diners, many of whom became accustomed to quick-service meals after the onset of the COVID-19 pandemic four years ago and who expressed interest in the concept, Nehme Jr. said.
The new Marigold is open for breakfast and lunch; it’s the only location with breakfast and the first time Marigold has offered breakfast since 2008, he said.

“It’s accessible to dine in, but it’s also really quick so that you can grab your quick breakfast or lunch and get back to work,” Nehme Jr. said.
“We’re just trying to accommodate the local law enforcement, the local Fort Carson (personnel), the doctors and service members in the community, the 9-to-5 workers in all different (occupations) that are in the area,” he added. “We’re just trying to make sure we provide Marigold-style food and service, but at a quicker pace.”
Among other items, Marigold & Go offers breakfast sandwiches, bagels, egg bites, avocado toast and pastries, cakes and desserts that are found at the original Marigold Café & Bakery, Nehme Jr. said.
For lunch, the Marigold & Go menu includes paninis, croissant sandwiches, salads and local, non-alcoholic beverages, he said.

In addition to introducing its quick-service concept, Marigold & Go will allow the restaurant’s owners to reach south-side customers who expressed interest in having a location closer to their part of town, Nehme Jr. said.
“The demand on the south end for good dining experiences, whether it’s quick service or fine-dining casual, they’re just looking for good food and just personable staff members and I think that’s what Marigold’s is showing the city we’re good at,” he said.
The original Marigold Café & Bakery opened in 1992; the Nehmes purchased the restaurant in 2017. They also acquired Walter’s Bistro in 2023 after owner Walter Iser wanted to “slow down,” he told The Gazette last year.

The owners view Marigold Café & Bakery as a casual and fine dining restaurant, while Marigold Bistro is fine dining, Nehme Jr. said. Both offer menus with steaks and seafood.
Marigold & Go might not be the last location for the brand, Nehme Jr. said. The family owners are eying a possible expansion to Colorado Springs’ north and northeast sides, though no new locations are imminent.
“We definitely want to cover north, south, east and west,” he said.
