Capriotti’s Sandwich Shop will open a third location Monday in Colorado Springs, as local franchisees for the national chain continue to expand the brand.

The restaurant will operate from 10 a.m. to 9 p.m. Mondays through Saturdays and 11 a.m. to 8 p.m. Sundays at 1286 InterQuest Parkway in the InterQuest Marketplace development on the city’s far north side.

The chain, founded in Delaware in 1976 and now based in Las Vegas, has more than 175 locations nationwide, its website says.

Capriotti’s specializes in turkey sandwiches that are made with turkey that’s slow roasted daily at its locations; the chain’s signature, Thanksgiving-style offering, “The Bobbie,” blends roasted turkey, cranberry sauce, stuffing and mayo.

Husband-and-wife franchisees Ron and Christen Sanders opened the first Capriotti’s in the Springs in December 2021 at the Creekwalk shopping center on Nevada Avenue south of downtown. They added a second location in April at Barnes Marketplace, a shopping center northeast of Powers Boulevard and Barnes Road on the city’s northeast side.

The couple’s third location in InterQuest, one of the Pikes Peak region’s hottest residential and commercial growth areas, will allow Capriotti’s to serve residents who’ve been asking when the chain would expand to Colorado Springs’ far north side, Christen Sanders said.

The Sanderses have signed a letter of intent for a possible fourth location that could open this year at the new visitor’s center that’s under construction at the Air Force Academy, Christen Sanders said. The couple also is exploring Fountain to the south and unincorporated Falcon to the northeast for a fifth location, she said.
