Colorado Springs café and bakery featuring gluten-free foods continues to grow
Michelle Marx and Turu Eurich, the mother-daughter team who own Coquette’s Bistro & Bakery, 321 N. Tejon St., can’t keep up with demand for their gluten-free baked goods. In the five years they have been in business they expanded their original crêperie restaurant in Manitou Springs to accommodate the amount of breads and sweets they were baking and to expand their bistro menu offerings. No sooner had they done that than they realized they needed a separate location with even more space for the bakery operation. So they leased a place to house their commercial bakery. Last year they took a big plunge and moved the bistro into a larger restaurant space downtown. A few months ago they acquired more footage next door to their downtown eatery. They moved the commercial bakery and opened a retail store in that additional space June 5. Now they are looking for an even bigger place to move the commercial kitchen again.
It helps that their gluten-free baked goods are carried by Whole Foods Market and other retail business.
“They (Whole Foods Market) want to take our products national,” said Marx. “We have to ramp up our production.”
In addition to bakery goods at the retail store you can get grab-and-go food like salads or main dishes for cooking at home.

Last-minute Father’s Day

Special days at market
The Downtown Sunday Market in Acacia Park, 115 E. Platte Ave. 9 a.m. to 2 p.m., is the place to find fresh, Colorado-grown produce, locally and organically raised meat, bakery-fresh breads and goodies, ready-to-go savory pies, and lemonade. Each Sunday the market also features a live band playing from 11 a.m. to 1 p.m. at the band shell. There are some special dates to put on your calendar, including:
– June 28 – Military Appreciation Day with the 101st Army Rock Band performing. You can get free flags while supplies last.
– Vegan pop-up stores with JL Fields and other vendors offer vegan goods and educational materials. Other pop-up stores will be Aug. 16 and Sept. 13.
– July 12 – Urban Homesteader Day where experts providing information and tips.
– Aug. 9 – Dog Day with several animal rescue groups.
– Sept. 27 – Colorado Springs Half Marathon and 5K.
– Oct. 11 – Venetucci Pumpkin Patch.
