TABLE TALK: Some Conway cookery surfaces at Stir
Remember Pie-Eyed Pies bakery? Didn’t think so. The store that specialized in all-things pie was opened in 2002 by Debbie and Jim Conway – the same family that owned the Conway Red Top hamburger emporium for years here. Like most Colorado Springs local business champions, I was saddened when the burger store closed. But, I was heartened when I stopped by Stir, 2330 N. Wahsatch Ave., coffee shop and found a freshly baked cherry pie prepared by Jackie Conway, Jim’s sister. It turns out Jackie has the same way and love of pie making that Debbie, possessed. And there is still a Conway food connection here alive and well.
“I love every pie I make,” she said. “I make them with the freshest ingredients possible. The pies are good because I really care.”
Although she is just making pies for Sabrina Soong, owner of Stir, at the moment, she may expand her customer base in the future. In the meantime, she is baking fresh pies with seasonal ingredients for Stir customers to enjoy with their cup of Joe. Hours are 7 a.m.-3 p.m. Mondays through Fridays and 8 a.m.-2 p.m. Saturdays.
